I recombined this recipe from various sources on the internet. Blinis are great with caviar and sour cream, of course, but they’re also great with other toppings, or even with just a touch of butter and salt on top.
Ingredients for four persons:
25g fresh yeast
800ml milk
2 tbsp sugar
4 eggs, scrambled
1/2 tbsp salt
1.5 tbsp butter
600g white flour
Preparation
Crumble the yeast into half of the milk. Dissolve slightly by stirring. Add flour, mix well, add the remaining milk. During this period, the dough will become quite tough to handle, but after all the milk is added, the going gets easier.
Add the eggs, sugar, salt and the molten butter.
Mix well, and let stand for 30-45 minutes in a warm place.
Bake blinis by putting spoonfuls in butter in a pan at medium heat, until blinis become golden brown. Keep warm in the pre-warmed oven.
Michael’s special tip:
If you’re in a hurry, you can add the sugar into lukewarm milk at the very beginning of the recipe, instead of at the end. This way, the yeast will become more quickly activated and will produce more CO2 to raise the dough.
